Simone P. Camel, PhD, RD is an Assistant Professor and Coordinator of the MS in Nutrition and Dietetics at Louisiana Tech University. Prior to entering academia, she had practiced as an advanced level clinical registered dietitian at a teaching hospital for many years. Her areas of research focus include Interprofessional education, food security, health disparities, global and cultural food and nutrition, and health policy. She has held leadership positions in professional organizations and has mentored numerous graduate and undergraduate research projects.
